According to Monsiour Anthony Bourdain it is our Island of Cebu that has the highest skill in preparing Pork " lechon baboy " but the question remains who???
Well according to my latest escapade into the food safari of Cebu it is Zubuchon the tasty flying pig hehe that deserves that title - or so they say! - and they even have it black on white.
Well I had pork from all over town/island seeking the best and so far CnT was my favorite the true delightful taste of lechon baboy but since Zubuchon claims the title I decided to put them to a test last weekend.
And so it went.
I went to BTC where they have the only outlet known to me and made sure to be there before noon - since after 12 noon they are usually sold out. With a proud price of 450PHP per kilo at least Zubuchon is definitively the number one price wise they are the most expensive.
But looking at the Article with Anthony Bourdain smiling at the Pork I figured they do deserve a try "pricey or not" after all how can a know food critic like Bourdain be wrong?
I have to admit the skin is sensational! It truly is the best I ever had it is crisp, brakes without being too dry and it has fantastic flavor - great skin here the Zubuchon is absolutely unbeatable but when it comes to the meat - that is a different story.
One thing must be said the Zubuchon is very much different in flavor, it almost reminds me in texture and flavor of pork meat that has been boiled and not roasted, it is moist and has a lot of juice now some love that me personally while I like the meat moist – I do not like the juice with the herbs it is really almost like soup.
So honestly if I could I would buy only the skin of the Zubuchon and the meat of the CnT lechon - that would be my personal pig heaven!
